Lemon Snack Cake

A couple of people requested the lemon cake recipe so here it is.

Lemon Snack Cake


1 1/4 cups flour

1 cup sugar

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1 egg

2 teaspoons lemon zest

1/4 cup butter melted

3/4 cup milk


3/4 cup powdered sugar

1 tablespoon butter melted

2 to 3 teaspoons lemon juice

Preheat oven to 350 degrees. Grease an 8 inch square pan.

Combine flour, sugar, baking powder, and salt in mixing bowl. Combine egg and lemon zest in a small bowl mix well. Ad egg mix, melted butter, and milk to dry ingredients. Mix well. (Some lumps will remain)

Bake 30 to 35 minutes or until a toothpick inserted in the center comes out clean. (mine took a little longer until the skewer was clean about 3 minutes. It will depend on the oven)


Combine powdered sugar, melted butter, and  enough lemon juice to reach desired consistency for glaze. Spread over cooled cake.
